All recipes are plant-based and oil-free.
I taught a pizza class in 2020 and the video recording did not turn out well so I couldn’t make it available on my website for purchase. Since then, I’ve had numerous requests to do this class again for people who missed it the first time. Of course, I’ve made some changes because I always get new ideas! My students who attended this class in 2020 have continually posted photos of their beautiful pizzas on social media so I know the class had an impression on them. It’s a fun way to make our healthy plant-based food with family and friends too.
For this class we will make from scratch whole grain pizza dough in class, along with tomato sauce, pesto, and various toppings. I’ll show you how to shave some vegetable toppings very thinly. We will roll out the pizza dough, transfer it to a pizza peel, and bake it on a baking stone in the oven or on your grill. We will also make a plant-based pizza cheese that can be shredded to top the pizza. Creative toppings and sauces will take your pizza to the next level

I have been thinking about this class for a long time and experimenting with tofu poke bowls full of unique ingredients such as ogo seaweed and kukui or macadamia nuts, versions of sushi that look like the Spam Musubi so popular in Hawaii. I have fond memories of banana bread on the Road to Hana and a special granola we enjoyed every morning at the Westin hotel, while we were on our honeymoon in Hawaii 20 years ago. My Tofu Poke Bowl, with roasted instead of fried tofu, is fresh and bursting with flavor, complimented by a bowl of a new version of miso soup. I think you will love the unique recipes in this fun class!

I was excited when a fast casual restaurant called Cava opened in our city. When I went there for a meal, I quickly discovered that almost everything on the menu was prepared with oil, even the rice and lentils. I was able to make a bowl with only greens, hummus (theirs is oil-free), pickled onions, cucumber and tahini dressing. As much as I enjoyed the “salad”, I wanted the whole thing—lentils, falafel, roasted veggies and more. I had to learn to make my own version at home, all oil-free! You will love this bowl.

Santa Fe is one of my favorite places to visit. The smells of roasting chiles, the complex spices in the food, the amazing restaurants I found over many years of returning time and time again. The Santa Fe Farmers Market where I discovered Heidi’s Organic Raspberry Jam and the unique types of chiles grown in the area keep us coming back. I wanted to find a way to create the flavors of Santa Fe in my plant-based style of cooking without oil. I think I succeeded with this menu. While papusas are not a New Mexico dish I discovered them while in Santa Fe where there are chefs from El Salvador making them in the local restaurants such as Tune Up Café, and Café Pasqual’s. I think of them when I think of Santa Fe!

Comfort food classes are at the top of the list of my most popular classes. Comfort food can be anything, depending on your heritage and experiences. I’ve been asked to teach people how to make their favorite stroganoff dish, southern food such as creamed corn, hush puppies, old fashioned meatloaf with potatoes and gravy for the boyfriend or husband, and other dishes that remind them of home, but in a whole food plant-based no oil version. I’ve been testing recipes and making various dishes like these that taste so good you won’t miss the original version.

When I was visiting my daughter in Houston last fall, I was inspired by a dish called, “Fall Salad” at Coltivare Restaurant where they grow produce for the restaurant on the garden patio. The salad had greens, persimmons, candied pecans and a pumpkin vinaigrette. I knew I had to make a version one day, along with their amazing focaccia bread with rosemary and sea salt. These dishes make me remember the flavors and smell of that fall day with my daughter.
