Hatch chiles were meant to be eaten in plant-based dishes. What could be better than a fresh roasted Hatch chile pepper, stuffed with grilled vegetables, beans, rice and corn, then roasted again and drizzled with ranchero sauce and sprinkled with plant-based queso? Or how about Cauliflower ’Chorizo’ Tacos with charro beans, Portobello and Hatch Rajas Tacos, Hatch Stuffed Calabacitas (zucchini) with some Hatch mashed potatoes? This is a great way to try several dishes made with the Hatch green chiles while socializing with other green chile lovers. Let’s bring the heat and have a blast grilling up these spicy dishes. $45.00 per person
