Let’s take a visit to the Sardinian Blue Zone, a place where the population of 100 year old, active, healthy people is one of the highest in the world. A diet high in plant-based dishes is one of the keys to their longevity. Colorful soups and stews, packed with bright vegetables and beans, grains, breads, and herbs are the secrets to their wonderful cuisine. We’ll make a hearty stew of Vegetables and Chickpeas, Sardinian Minestrone, full of beans, vegetables and toasted fregola pasta. Who doesn’t love roasted potatoes, especially when combined with fresh fennel and capers.  Crunchy and flavorful black bean falafel (baked, not fried), a unique Couscous and Vegetable dish and we’ll be fans of Sardinian food for life. The Sardinian Flat Bread is one of my favorite dishes. Crispy, light and flavored with rosemary, dipped in the creamy white bean dip, is unforgettable. $45.00 per person
