I think casseroles are great for family meals, leftovers, and company dinners. I’ve tested many plant-based versions to come up with a few that are simply divine. I don’t use fake meats, just whole food ingredients such as roasted vegetables, potatoes, beans, and meaty tasting mushrooms. Occasionally I use tofu, however, for tofu haters, it can easily be omitted. Black Bean Enchiladas, Spaghetti Pie, Chickpea and Eggplant Moussaka, and the most amazing Vegetable Lasagna, made with non-dairy cheeses that taste like the real thing are on the menu. Come to class to learn how cooking techniques using spices, seasonings, and sauces can transform whole plant foods into craveable creations, and experience the fun of sampling food with a group of friendly people in a warm, inviting environment. $45.00 per person
