I used to love to visit New Orleans, Louisiana to enjoy my favorite Cajun dishes and I made many for my family over the years. I was known for my special jambalaya.
Since I’ve been eating plant-based I tried to re-make my favorites and succeeded in making some truly good dishes. My Jambalaya is a rice dish made with either tofu or jackfruit and oat sausage and Cajun spices.  Etouffee, a rich tasting dish with mushrooms and sauce, served over rice, has the taste of what I used to love.  Of course, Red Beans and Rice are perfect for this way of eating and only need slight modification to make them whole food plant-based oil free.  Gumbo with an oil-free roux and some substitutes to the classic ingredients will be a soup you make again and again.  I tried to make a pecan praline inspired dessert and came up with the Chewy Pecan Cookies. I love them!

All Plant-Based Oil Free Versions
Jambalaya (rice with vegetables and tofu or oat sausage or jackfruit)
Etouffee (mushrooms or tofu in a tasty sauce over rice)
Gumbo (soup with a special dry roux)
Red Beans and Rice
Chewy Pecan Cookies
