One pot meals are perfect this time of year. If you’re looking for some great tasting plant-based soups, stews or chili or just looking for a fun way to sample a variety of plant-based dishes with a fun and friendly group of people, this class if for you. I will show you how to make the recipes both on the stove and in the Instant Pot. These plant-based dishes are full of flavor and stand alone as hearty, delicious and healthy meals. They are also budget friendly and include no processed ’fake’ meat products. I use whole plant foods, such as beans, potatoes, greens, and grains for the protein component of each dish. Green Chile Stew, loaded with chickpeas, potatoes, green chiles and other vegetables, Potato Leek Soup, Tortilla Soup, another classic with a twist, Corn Chowder, more like a stew than a soup, and Black Bean Chili, a version of my award winning chili, minus the meat, but even better, and last but not least, Wild Rice Soup, creamy without the cream, nutty and soul satisfying. Imagine having a freezer full of these soups, stews or chili to bring to work or heat up when you don’t feel like cooking. I know you can buy ready-made soup at the grocery store deli, however plant-based choices are limited and often high in sodium. When you make your food you control the sodium level.
