Super Quick and Easy Plant-Based Meals, January 9, 2021, 1-3 Central Time

In this class I will show you how to make five basic meals that can be used for lunch or dinner, along with quick breakfast ideas, lunch and side dish ideas, and shopping tips.  These meals are made with easy to obtain frozen, canned, and dried foods, some fresh food, and some packaged foods.  I’ve tried to simplify these meals so a very busy person can be successful.  I’ve known of people who have followed the whole food plant-based way of eating by eating only a couple of the same meals over and over.   They were very satisfied and achieved outstanding results with their weight loss and health.  I personally prefer a wide variety of gourmet plant-based food, cooked from scratch, full of fresh herbs and lots of ingredients, however I realize that is too difficult for so many.  My adult daughter told me she worked 50 hours a week and didn’t feel like cooking anything after a long day.  She also didn’t want to spend her precious days off batch cooking!  She asked me to give her a week’s worth of meal ideas she could make from food she picked up at Trader Joe’s, Whole Foods or the regular grocery store.  These same five meals can be modified to create meals for every single week.  On days you really feel like cooking, select more complicated recipes such as Cauliflower Shepherd’s Pie or Chili Mac with Cheese Sauce.

The following super quick and easy meals will be demonstrated in the Zoom class.  You will receive a detailed recipe packet for exactly how to make these meals.

Recipes/Meals

  1. Asian Bowl (brown rice with tofu and vegetables, stir-fried vegetables, or fried rice)
  2. Tex-Mex Dinner (Taco rice, tacos, burritos)
  3. Pasta Dinner (pasta with marinara sauce)
  4. Beans and Rice (bowl with toppings, skillet beans and rice)
  5. Potatoes (skillet hash browns and vegetables, loaded baked potatoes

Quick daily breakfast ideas such as smoothies, cereal, oatmeal and toast

Lunch ideas including Instant Pot soup, chickpea salad sandwich and more

Shopping list with tips for convenient whole food plant-based groceries to make your meals come together quickly
