Prepare in advance:
Hatch chiles: 6 whole chiles for stuffing, 1 1/2 pounds roasted, peeled and seeded green chiles for green chile sauce, tofu, and guacamole, so you’ll need about 4 pounds raw chiles. If you want to purchase already roasted chiles for the sauce and other dishes you can. Our local grocery stores carry one-pound boxes of freshly roasted but not peeled or seeded Hatch Chiles. You can buy the 6 (get 8) whole chiles for stuffing and the rest already roasted if you’d like. If you’re unable to get fresh Hatch chiles, buy 6 (8 in case you mess up) whole Anaheim or Poblano
peppers for the stuffed chiles, and a jar of Hatch green chiles (not sauce). I’ve seen brands of roasted Hatch chiles in Costco, Walmart and many grocery stores. The can products are ok but a last resort.
