What will you make for your holiday meals this year? I’ve got some new recipes I think you will love.
I’ve taken my favorite lentil, vegetable, and rice casserole and turned it into a a festive shape, served with chickpea gravy or cheese sauce and it really does taste good. (Sorry but I know a lot of lentil “loaves” are not that good.)
My stuffed potatoes have a couple secret ingredients that make them extra special, are topped with a savory creamy sauce, and sprinkled with crispy tofu “bacon”. The potatoes alone would be an excellent entree. Harvest Salad with seasonal fruit and crispy greens and Citrus Dressing goes so well with these dishes. The dessert is a Maple Pecan Pumpkin Cake with Cashew Frosting. My husband ate a piece and didn’t have any suggestions to improve it, so I know it must be good. He usually tells me my desserts are not sweet enough. It’s a nice break from pumpkin pie.
