I was excited when a fast-casual restaurant called Cava opened in our city.  When I went there for a meal, I quickly discovered that almost everything on the menu was prepared with oil, even the rice, and lentils. I was able to make a bowl with only greens, hummus (theirs is oil-free), pickled onions, cucumber, and tahini dressing. As much as I enjoyed the “salad”, I wanted the whole thing—lentils, falafel, roasted veggies, and more.  I had to learn to make my own version at home, all oil-free!  You will love this bowl.
