Japanese Sushi Rolls, Onigiri, Sushi Burritos, and Miso Soup
Sushi rolls, also called norimaki, and inside out sushi rolls, called uramaki, can easily be made plant-based using a variety of fillings, many more that is found in a typical restaurant where you may only see avocado or cucumber rolls. If there are other types they may be made with fried ingredients. Recently, in Mexico, I had a wonderful inside out roll made with chickpea spread and avocado, which I will try to recreate for you.
It seems like everyone is making sushi rolls now and I notice how much people struggle with getting the rice cooked properly, rolling inside out rolls that stay together and aren’t too fat, and making rolls with nori on the outside that stay together and look round and uniform. I will show you some tips on how to create tasty and nice looking sushi using nori (seaweed) both inside and outside.

Onigiri: I recently discovered how popular onigiri is the US. I went to an onigiri restaurant in Santa Monica, California called Sunny Blue and enjoyed their variety of vegan onigiri. At a popular onigiri restaurant in Tokyo people wait 2-3 hours in line for onigiri! I’ve been working on various fillings, the best rice, the right temperature, the crispiest and best tasting seaweed that all come together for a flavor explosion! I wanted to share this Japanese comfort food with you. One of my friends told me once, “All you need is onigiri and a bowl of miso soup.” I’ll be making some quick sushi rolls (like a burrito) that require very little skill, but taste fantastic. Every time I make these dishes for friends they are so happy!
