Plant Based Afternoon Tea
Afternoon tea is an English tradition. It is usually composed of finger sandwiches, scones with clotted cream and jam, and sweet pastries and cakes, along with tea, of course, sometime in the afternoon. Afternoon tea has become quite a popular American experience in recent years. For those of us who follow a whole food plant-based oil free way of eating, choices are limited or non-existent. “Vegan” afternoon tea may omit animal products but still use loads of plant based butter and mayo. I wanted to have the afternoon tea experience with sandwiches and cakes I could fully enjoy and to share this with you so you could create your own tea experience. Also, I have been enjoying freshly brewed tea from leaves and that is an important part of a true tea experience. BUT, if you are too busy to make a fancy array of sandwiches and pastries, you will have enough recipes from this class to select one or two for a simple tea. A cup of tea, a sandwich, homemade scone with fruit jam, and a chat with friends or family, is a wonderful way to spend an afternoon.
If you’re too stressed to invite friends over on the weekend for dinner, consider afternoon tea!

This is an 8-hour intensive retreat for people who are interested in adopting a plant-based diet, eating more plant-based meals, or for those who are already following a plant-based diet and looking for ways to be more successful at this lifestyle.
Spend a full day with Chef Julia at her country home situated on 5 acres in Azle, Texas. You will be greeted with a full breakfast and a day of sessions geared toward making plant-based cooking easier and better tasting than you imagined. Chef Julia will share her expertise in cooking, organizing, and thriving on a plant-based way of eating.
Sessions include:
- Shopping, storing, meal prep, staples, and an overview of how to set up your house for success.
- Smart Cooking: What to do with all the food you brought home so you don’t waste it? Staple foods to prepare every week and more.
- Recipes are not enough! We all seem to have cookbooks, access to the Internet, and an overwhelming number of recipes, yet I constantly hear people saying they can’t think of what to cook when they’re busy, mentally tired, hurried, or just plain tired. We need to have a solution to this dilemma and I have one to share with you.
- Core Recipes: I’ll do a demo and then we’ll cook together. We’ll make the 5 Core Recipes I’ve developed that you can use as a foundation for many meals. Each core recipe can be made into at least 3 other versions, minimizing the need to constantly think of recipes to cook.
- Weight Training: My personal trainer will stop by for a few minutes to share the importance of strength training and demonstrate a few exercises he does with me every week.
- I’ll demonstrate how we can transform each Core Recipe into other meals and we’ll have a late lunch/early dinner together.
- Dessert demo and tasting
- How to implement this way of eating across all situations. Tips for traveling, restaurant meals, sabotage from friends and family, and other topics requested by attendees.
Each attendee will receive a detailed document with all the information addressed in the retreat as well as all the recipes. The cost of the retreat is $350. Space is limited so sign up as soon as possible.
Chef Julia will also send local hotel information to those who register.

I love to visit Santa Fe, New Mexico and indulge in the variety of chiles available, from green to red, mild to spicy. Breakfast in Santa Fe is my favorite meal. During my last trip I had an outstanding version of Tofu Scramble at the Chocolate Maven restaurant and special vegan chile creations at Café Pasqual. I used to love the Blue Corn Pancakes at Tecalote Café as well. This is going to be so much fun creating healthy plant based no oil versions of my favorite dishes.

Japanese Sushi Rolls, Onigiri, Sushi Burritos, and Miso Soup
Sushi rolls, also called norimaki, and inside out sushi rolls, called uramaki, can easily be made plant-based using a variety of fillings, many more that is found in a typical restaurant where you may only see avocado or cucumber rolls. If there are other types they may be made with fried ingredients. Recently, in Mexico, I had a wonderful inside out roll made with chickpea spread and avocado, which I will try to recreate for you.
It seems like everyone is making sushi rolls now and I notice how much people struggle with getting the rice cooked properly, rolling inside out rolls that stay together and aren’t too fat, and making rolls with nori on the outside that stay together and look round and uniform. I will show you some tips on how to create tasty and nice looking sushi using nori (seaweed) both inside and outside.
Onigiri are Japanese rice balls filled with a savory ingredient and wrapped in seaweed (or not)
Onigiri: I recently discovered how popular onigiri is the US. I went to an onigiri restaurant in Santa Monica, California called Sunny Blue and enjoyed their variety of vegan onigiri. At a popular onigiri restaurant in Tokyo people wait 2-3 hours in line for onigiri! I’ve been working on various fillings, the best rice, the right temperature, the crispiest and best tasting seaweed that all come together for a flavor explosion! I wanted to share this Japanese comfort food with you. One of my friends told me once, “All you need is onigiri and a bowl of miso soup.” I’ll be making some quick sushi rolls (like a burrito) that require very little skill, but taste fantastic. Every time I make these dishes for friends they are so happy!
