English Tea Bread (no oil)

I found out about this bread by watching the Great British Baking show. Very strong tea is brewed and lots of fruit is soaked in it for hours. The moist bread with Texas pecans is dense and so good with a hot cup of tea. It makes a perfect gift for your plant based friends.

Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • 1 cup strongly brewed English Breakfast tea (2 tea bags)
  • 1 ½ cups dried fruit (pineapple, cherries, cranberries, raisins, dates, golden raisins, mango
  • ½ cup unrefined organic can sugar or other dry sweetener
  • 1 tbsp Texas peach preserves or jam (or marmalade/jam of your choice)
  • 1 â…” cups whole wheat pastry flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 2 tbsp aquafaba (liquid from canned chickpeas)
  • 1 tbsp water
  • ½ cup Texas pecans, chopped (or walnuts, or both)

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. Allow the tea to cool. Soak the dried fruit in the brewed tea for 4-5 hours or overnight. Line a 8 1/2 by 4 loaf pan with parchment paper. Preheat the oven to 325 degrees.

  2. Place the dried fruit and tea in a mixing bowl. Stir in the sugar and jam. In a separate bowl, whisk together the whole wheat pastry flour, baking powder, and cinnamon. Add the whisked dry ingredients to the bowl of fruit and jam. Add the aquafaba and water and stir to combine.

  3. Place the mixture in the pan. Bake for 60 minutes or until a toothpick comes out clean. Cool in the pan for 30 minutes before removing it to a wire rack.
