Hatch Chile Rice and Beans

This is a quick and easy recipe, adapted from the Green Chile Rice with Black Beans in the Forks Over Knives Cookbook, but using the in-season Hatch chiles which are being roasted and sold at our local Central Market and prepared rice. You can also find roasted Hatch green chiles in cans or jars. Costco has a very good roasted Hatch chile sauce, sold in jars, that can also be used. Packaged or frozen brown rice and canned black beans make this dish easy to prepare on a busy day. I like to keep a package or two of Trader Joe's frozen organic brown rice on hand, as well as their organic black beans. Fresh lime juice squeezed on at the end adds an unexpected brightness to this dish.

Hatch Chile Rice and Beans

Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • 4 oz Hatch green chiles, roasted, peeled and diced
  • 1 cup fresh cilantro, chopped, plus extra for garnish
  • ½ cup fresh spinach
  • 4 cups cooked brown rice
  • 1 cup sweet white onion, chopped
  • 1 tsp ground cumin
  • 1 spicy pepper, serrano or jalapeno, minced
  • 1 can black beans, rinsed and drained (2 cups)
  • 1 lime
  • salt free seasoning, to taste (such as Penzey's Arizona Dreaming)
  • 2 scallions, thinly sliced

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. To make the Hatch Chile sauce, place green chiles, cilantro and spinach in a blender or food processor. Add water to thin, if necessary, to make a smooth sauce. Set aside.

  2. In a 12 inch skillet, over medium high heat, water saute the onion by cooking with 1/4 cup water,until softened and lightly browned. Add more water as necessary. This process will take several minutes. Add the cumin, spicy pepper, and black beans along with the Hatch Chile sauce. Cook until the beans are heated and the sauce is bubbling. Add the brown rice and combine with the beans and sauce. Squeeze juice from the lime on top. Sprinkle with salt-free seasoning of your choice. I like Penzey's Arizona Dreaming. Add more chopped cilantro and scallions as garnish, if desired.
