Plant-Based Indian Platter (Quick Biryani)

Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • 4 cups cooked rice (I used frozen organic brown rice, Trader Joe's)
  • 2 cups chopped vegetables, such as carrots and zucchini, broccoli, summer squash, etc
  • ½ cup onion, chopped
  • ¼ cup raw cashews, roughly chopped
  • ¼ cup raisins
  • 1 tbsp curry spice blend, such as Biju's Curry blend
  • 1 lemon

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. Heat a large skillet to medium high heat. Add the vegetables, onion, and a couple tablespoons of water to "water-saute" the vegetables. Add the curry blend, cashews, and raisins. When the vegetables are cooked to your liking, add the rice and mix well. Cook until the rice is heated through. Squeeze lemon juice over the rice.
