New Orleans is one of our favorite places to visit, mainly for the food.  During one memorable visit we had an appetizer special at Emeril’s consisting of a cast iron pan made for escargo but filled with still sizzling broiled scallops on sweet potato puree with crispy aged country ham and bagna cauda butter, served with grilled crostini with sriracha butter.  We will make a version of this unforgettable dish, along with an entree of cast iron skillet roasted mahi mahi with shellfish creamy tomato sauce,  seafood stuffed zucchini, and Creole baked cheese grits. Learn the techniques of pan roasting fish, making a pan sauce, perfect artisan stone ground grits, and much more. Chef Julia will demonstrate these dishes while you relax and enjoy the food.  For dessert, local peach upside down cake with rum.  BYOB $60 per person
