Plant-Based Tater Tot Casserole

This recipe was inspired by the Vegan MoFo recipe, Vegan Tater Tot Casserole. I added seasoning blends to the white sauce to improve the taste of the white sauce. I used unsweetened soy milk. The extra seasonings disguise the flavor of plant-based milk. You can use regular Tater Tots but there are also other brands of potato "tot" that are organic and probably have healthier ingredients. The casserole is pure comfort food and satisfies a craving for rich, creamy, hot dishes like the ones I made my children many years ago.

Plant-Based Tater Tot Casserole

Recipe Ingredients

First of all, check if you have all the necessary ingredients for this recipe. Pay attention to the quantities!
  • 2 cups unsweetened plant-based milk of your choice (soy, almond, etc)
  • 3 tbsp Earth Balance margarine
  • 2 tbsp flour
  • ½ tsp seasoning blend such as Penzey's adobo or Trader Joe's 21 Seasoning Salute
  • 24 oz frozen mixed vegetables
  • 8 oz plant-based pepper jack cheese shreds (Daiya) or plant-based cheese of your choice, shredded
  • 4 tsp Earth Balance margarine
  • 32 oz bag of frozen Tater Tots or organic potato "tots"

Recipe Instructions

Next, follow the steps to finalize your dish and finally be able to enjoy it!
  1. In a large skillet, over medium-high heat, melt Earth Balance. Add flour and blend with a whisk. Cook for 3-5 minutes, until light brown. Reduce heat to low and slowly add the milk and whisk continuously while adding it. Return heat to medium and cook until sauce is thickened, another 3 minutes or so. Add seasonings of your choice. Salt, pepper and seasoning blends. Spray a 9 by 13 baking dish with olive oil spray. Place the frozen vegetables and shredded cheese in the casserole dish. Add the sauce and mix well. Dot the top with the 4 teaspoons of Earth Balance. Cover the top with rows of tater tots, placed touching one another, side by side. Bake for 45 minutes at 375 degrees, or until the tater tots are crispy and the vegetable and sauce mixture is bubbling. Do not overcook or the sauce will become too thick.
